They were then mashed, but not crushed, but pressed as whole berries. Over 40% of the juice was transported to barrels where it was fermented with the yeast available from the peels. The remaining wine was allowed to begin fermentation in stainless steel tanks, which was then completed in new French oak barrels. Tasting notes: Viognier is a silky smooth white wine that has
